Crafted with natural oils and made with your SodaStream, this homemade cola not only rivals store-bought versions in taste but also lets you control the ingredients.

Ingredients:

For the Flavoring Formula:

  • 3.50 ml orange oil
  • 1.00 ml lemon oil
  • 1.00 ml nutmeg oil
  • 1.25 ml cinnamon cassia oil
  • 0.25 ml coriander oil
  • 0.25 ml neroli oil
  • 2.75 ml lime oil
  • 0.25 ml lavender oil
  • 10.0 g food-grade gum arabic
  • 3.00 ml water

For the Cola Concentrate:

Method:

  1. Create the Flavoring Formula: Combine all the oils, gum arabic, and water in a small bowl. Stir until the gum arabic is completely dissolved. This is your flavoring formula.

  2. Create the Cola Concentrate: In a large pot, combine the water and sugar. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. Remove from heat and let it cool for a bit. Then, carefully add the phosphoric or citric acid, the flavoring formula, caffeine (if using), and caramel color. Stir until everything is thoroughly combined. This is your cola concentrate.

  3. Carbonate the Water: Fill the SodaStream bottle up to the fill line with cold, filtered water. Attach it to the SodaStream machine and carbonate the water. Usually, this involves pressing the button on top of the machine a few times until you hear a loud buzz, indicating the water is carbonated.

  4. Mix the Cola Concentrate with Carbonated Water: Remove the bottle from the SodaStream machine. Pour 30-60ml of your cola concentrate into the carbonated water. The typical ratio is 1 part syrup to 4-5 parts carbonated water, but you can adjust this to taste.

  5. Stir Gently: Stir the mixture gently to combine the syrup and carbonated water. Be careful not to stir too vigorously, as this can cause the drink to lose its carbonation.

Hints and Tips:

  • Always add the syrup to the carbonated water, not the other way around. Adding water to syrup can cause excessive fizzing and overflow.
  • Adjust the amount of cola concentrate to taste. If you prefer a stronger flavor, add more concentrate. If you prefer a lighter flavor, add less.
  • Store any leftover cola concentrate in the refrigerator. It should keep for several weeks.
